Revamp Those Old Cupcake Recipes!

This past weekend I made cupcakes for a friend’s Wedding Shower and I also baked some for a few of my Valentines*. I decided on Strawberry cupcakes with three different icings:

Original Tart

Fresh Strawberry 

Fresh Blueberry

You can always make these cupcakes Gluten-Free, Dairy Free etc. but since nobody at this particular party had a preference I went ahead and just added some fun new ingredients into these cupcakes without making them Gluten-Free. 

It was fun for me to play around with enhancing the nutritional value of typical cupcakes without modifying them all together.I think it is so important to include raw food in all dishes that you consume. Raw food carries living energy in it, which is why you feel great when you eat it! Adding something fresh is a main component of everything I make. Beautiful and delicious things can have health benefits too! 


EASY WAYS TO MAKE THINGS MORE BEAUTIFUL AND NUTRITIOUS

With the Flavored Icings: I added Blueberries that I had processed through the food processor and then Strawberries separately. (Since the Strawberries weren’t very sweet I added some Raw Oklahoma Honey to them)

With the Cupcake Batter: I added the Fresh Strawberry Mix to the center of the cupcakes before baking. I then sprinkled Chia Seeds on the top of each pre-baked cupcake (gave a beautiful poppy seed texture). I topped these with Fresh Organic Blueberries and Strawberries. These were really fun to make and everyone said they were really good! Super moist and fresh with the addition of the fresh fruit in the ingredients.
